Grilled sourdough with pistachio butter is a delightful and unique combination of flavours and textures.Β Initially I am quite skeptical with pistachio butter but surprisingly it taste good and I like the texture of the sourdough.
Pistachio butter is made by blending roasted pistachio nuts into a creamy, rich, and spreadable consistency. It has a distinct nuttiness with a mild, sweet undertone. The pistachio flavor is earthy and slightly sweet, with hints of toasted nuts, making it a delightful complement to the sourdough bread.
Mee Sua, Chicken Brodo, Kaffir Water, Salted Veg, Caviar $16

Didnβt expect this combination as Mee Sua will become dry easily. This interesting combination creates a unique blend of flavours and textures, offering a contrast that can be both luxurious and satisfying.
The Mee Sua provides a soft and delicate base that contrasts with the firm and popping texture of the caviar. The smoothness of the noodles complements the burst of caviar eggs.
Trout Mi-cuit, Pumpkin and Shrimp Emulsion, Salted Egg $19
“Mi-cuit” means “half-cooked” in French. In this context, the trout is typically lightly seared on the outside while remaining tender and slightly rare on the inside. It has a delicate, flaky texture with a mild, sweet, and slightly nutty flavour. The searing imparts a subtle smokiness and caramelisation to the surface.
The trout’s mild sweetness and nuttiness pair well with the creamy and subtly sweet pumpkin. The shrimp emulsion adds a layer of seafood richness, further enhancing the overall balance of flavours.
Pork Ragu, Potato Dumplings, Cappers, Lemon Oil $18
Love this dish as all the ingredients are perfectly match and we finish the entire plate within a second. The rich and meaty Pork Ragu pairs beautifully with the soft and doughy potato dumplings. The lemon oil adds a refreshing and vibrant element to the dish, providing a zesty counterpoint to the heartiness of the Ragu and dumplings.
Apple and Pear Crumble w/ Vanilla Himalayan Salt Gelato $12
I am not a fan of vanilla ice cream to be honest. After I try my first bite with the apple and pear crumble, I simply couldnβt stop myself and keep digging.
The hot apple and pear crumble, fresh from the oven, contrasts wonderfully with the cold, creamy gelato. The combination of sweet fruits, sugar, and the vanilla salted gelato creates a delightful interplay of sweet and salty flavours. The salt accentuates the sweetness of the dessert while balancing it with a savoury touch.
