Chef Mathew Leong, Executive Chef at RE-NAA, Norway’s only two-MICHELIN-starred restaurant in Stavanger and Chef Alan Chan, Executive Chinese Chef of Cassia are pleased to announce a novel collaboration that will be available for two nights only at Cassia, Capella Singapore.
Set to enthral diners with their repertoire of specialty dishes through this exclusive culinary partnership, Chef Mathew and Chef Alan will showcase the melding of Nordic and Cantonese flavours through a six-course gastronomic set menu. While each chef will present two main dishes that best represent their specialities, they will join hands to craft the appetiser and dessert as a special treat for diners.
Having moved to Norway eight years ago at the age of 21 to embark on his culinary journey, Chef Mathew’s style of cooking is built on the solid foundation of Nordic and French cuisines, while paying homage to his Asian roots. Last month, he was the first and only Singaporean to have made it in the Forbes 30 Under 30 Europe 2023 list under the Arts & Culture category since the list was introduced seven years ago.
“I am thrilled to be collaborating with Chef Alan for this exclusive dinner. As a Singaporean who has been working in Norway for the past eight years, it feels really nice to come back home to cook and interact with the chefs here as I don’t often get such opportunities,” said Chef Mathew. “Born into a Cantonese family, I enjoy eating Cantonese and Chinese dishes, and have been trying to hone my skills in both cuisines since my specialty has always been in Nordic-French cooking. I look forward to learning and exchanging valuable culinary knowledge with Chef Alan.”
Excited to be introducing Nordic cuisine infused with Asian flavours, Chef Mathew will showcase creative play with flavours inspired by the best produce available from the culinary region of Rogaland in Norway. He will use products from the sea, fjords, land, forests, and mountains in his creations that best represent Norway.
Chef Alan who has worked in various MICHELIN-starred restaurants and in the kitchens of renowned Chinese restaurants in Singapore, London, and Seoul shared, “I am ecstatic to be working with Chef Mathew Leong, a well-respected Nordic-French chef. Available for dinner from 6.30pm to 10pm on 19 and 20 May 2023 only, the six-course set menu is priced at SGD 298++.
