Hong Kong One Harbour Road Cantonese restaurant will be making a debut in Singapore at 5 ON 25 Andaz!
From 28th March to 9th April 2023, Executive Chinese Chef Chan Hon Cheong of Cantonese restaurant – One Harbour Road, which was awarded The Plate Michelin in Grand Hyatt Hong Kong, will be making a debut on Singapore shores. Modern upscale Cantonese restaurant 5 ON 25 at Andaz Singapore will play host to his refined showcase of Cantonese fare, available for lunch and dinner.
Chef Chan will also be joined by the talented Dim Sum Chef Lam Chun Shan of One Harbour Road. Guests can look forward to exquisite hand-crafted morsels of dim sum delights, main courses, desserts, and set menus, alongside mesmerising views from level 25 and an exceptional selection of wines and tea.
The guest chef event highlights Chef Chan’s signature dishes that are synonymous with the beloved Cantonese cuisine in Hong Kong. It also emphasizes on the use of ‘live’ seafood and sustainably sourced ingredients and elevates time-honoured traditions with a creative twist.
Dim sum lovers can enjoy handcrafted eight morsels from Chef Lam Chun Shan that are exquisitely steamed, baked, or deep-fried. Highlights include the Steamed Patagonian Toothfish and Shrimp Dumpling with Sichuan peppercorns (SGD 9 for 3 pieces); the quintessential classic Baked Pineapple Buns (SGD 4 per piece) with honey barbecued pork and apple; and the fried Crispy Taro Pastries (SGD 9 for 3 pieces) stuffed with diced chicken mild curry sauce – an interesting blend of sweet and savoury flavours.
Chef Chan will serve various home-style dishes including the nourishing Double-boiled Chicken and Pork Shank Soup (SGD 48). Served in a young coconut, the rich soup is an ode to a typical Cantonese dining experience and is teeming with conch, matsutake mushrooms and bamboo pith. The delicately crispy Wok-fried Iberico Pork Fillet (SGD 38) is coated with a savoury caramelised dark vinegar sauce for a sweet and sour taste and punctuated with pistachio for extra crunch and nutty flavours. Equally delightful are tender slices of Stir-fried Australian Wagyu with Foie Gras (SGD 88). Seafood lovers can relish in a Boston Lobster (SGD 58) done two ways; deep-fried and served with shrimp mousse and spicy pepper salt, and braised with minced pork, egg and enlivened with a spicy sour sauce. Perfect for sharing is a Steamed Garoupa Fillet (SGD 48) with cordyceps flowers and Sichuan peppercorns.
For intimate to large convivial gatherings, opt for the four, five or seven-course menus (starting at SGD 88 per person) that can be enjoyed in one of the two Private Dining Suites. Creations include One Harbour Road Dim Sum Garden, Fried Rice with scallops and barbecued pork, and a trio of desserts to conclude.
During this period, 5 ON 25 will be offering a limited à la carte menu. The restaurant is helmed by Chinese Head Chef Lim Hong Lih, who was inspired by his father to start his culinary journey. He has worked at iconic Cantonese establishments for over two decades.
